Each recipe is meant to be flexible. Adjust sweetness, steep time, and milk to taste.
Warm and spiced
Classic Masala Chai
Rich black tea simmered with milk, ginger, and warming spices.
Serves 2 · About 15 minutes
Ingredients
- 2 cups water
- 2 black tea bags or 2 teaspoons loose black tea
- 1 cup milk
- 1 tablespoon sugar or honey
- 1-inch piece of fresh ginger, sliced
- 4 cardamom pods
- 1 small cinnamon stick
- 2 cloves
Method
- Bring the water, ginger, cardamom, cinnamon, and cloves to a gentle boil.
- Lower the heat and simmer for 5 minutes.
- Add the tea and milk, then simmer for another 3 to 4 minutes.
- Sweeten to taste, strain, and serve hot.
Fresh and light
Mint Green Tea
A clean green tea brightened with fresh mint and a little honey.
Serves 2 · About 8 minutes
Ingredients
- 2 cups water, just below boiling
- 2 teaspoons green tea leaves or 2 green tea bags
- 8 to 10 fresh mint leaves
- 1 to 2 teaspoons honey
- Optional slice of lemon
Method
- Place the tea and mint in a pot or heatproof jug.
- Pour over the hot water and steep for 2 to 3 minutes.
- Stir in the honey while warm.
- Serve as is, or add a little lemon for extra brightness.
Classic and soothing
Honey Lemon Black Tea
A simple black tea with enough lemon and honey to feel restorative.
Serves 1 · About 6 minutes
Ingredients
- 1 cup freshly boiled water
- 1 black tea bag
- 1 to 2 teaspoons honey
- 2 teaspoons fresh lemon juice
- Optional thin lemon slice
Method
- Steep the tea in hot water for 3 to 4 minutes.
- Remove the tea bag and stir in the honey.
- Add the lemon juice and taste.
- Finish with a lemon slice and drink warm.
Cold and easy
Iced Peach Tea
Fruity black tea served over ice with peach and a little sugar.
Serves 2 to 3 · About 12 minutes plus chilling
Ingredients
- 3 cups water
- 3 black tea bags
- 1 ripe peach, sliced
- 1 to 2 tablespoons sugar
- Ice
- Optional mint to finish
Method
- Bring the water to a boil and steep the tea for 4 minutes.
- Stir in the sugar while warm, then add the peach slices.
- Let it cool, then chill until cold.
- Serve over ice with the softened peach slices and mint if using.
Quick Brewing Tips
- Green tea is best with slightly cooler water to avoid bitterness.
- Black tea can take stronger flavour and pairs well with citrus, milk, and spice.
- If a recipe tastes flat, a tiny pinch of salt or an extra squeeze of lemon can sharpen it.
- Sweetness is easiest to judge after the tea has steeped fully.
